Halloween Rocky Road Recipe

The kids spotted a packet of edible eyes which I’d bought in Poundland recently and although they were meant for Halloween we decided we couldn’t wait and put them on Rocky Road instead.
I’ve made Rocky Road a few times now and played with the measurements and chocolate ratio and I now feel I’ve cracked the perfect mix.
Ingredients:
200g Digestive Biscuits
125g Unsalted Butter
250g Chocolate (I used 150g Milk Chocolate and 100g Plain Chocolate)
1 – 2 tbsp Golden Syrup
70g Mini Marshmallows
70g Raisins
Method:
Line an 18” square tin or similar sized rectangular tin with cling film
Melt the butter, chocolate and golden syrup in a bowl either in the microwave or over a pan of boiling water. If you choose to do the latter then make sure the water does not touch the bottom of the bowl
Bash the biscuits up into small prices
Once the chocolate has cooled a little, add the broken biscuits, marshmallows and raisins
Put the mix in the tin and ensure there are no gaps before adding any sprinkles or edible eyes on top
Put the Rocky Road in the fridge for a couple of hours and then get the kettle on and don’t tell the kids it’s ready to eat. Enjoy!
